Eating healthy isn’t always easy, especially if your schedule or obligations don’t permit it. However, a hectic schedule and obligations such as family are the exact reasons why eating healthy foods is important.

Take advantage of this fact and instead of creating more weak cells that are more prone to disease and death, supply your body with what it needs to create healthy, vibrant cells.
Think of it this way; would you rather have Starbucks and McDonalds cells to keep you going or apple and spinach cells to increase your longevity? So how do you change your habits to eat more healthy foods?

Here is a quick, delicious, and wholesome meal that is sure to power your life.
Quinoa Salad
- 3 cups organic chicken stock
- 1 ½ cups quinoa ¼ cup finely chopped red onion
- ¾ cup frozen peas, thawed
- 2 chopped green onions
- ½ cup chopped red bell pepper
Dressing
- 2 Tbsp balsamic vinegar
- 2-4 Tbsp Olive Oil
- 1 tsp Dijon mustard Salt and pepper to taste
- 2 Tbsp chopped fresh herbs, such as basil, dill, parsley, or cilantro
1. Bring quinoa and chicken stock to a boil. Reduce heat and let simmer until all liquid is absorbed, about 15-20 minutes. Chill.
2. Prepare all ingredients and add to chilled quinoa.
3. Wisk dressing ingredients together and add to the rest of the ingredients.
Toss together to coat evenly.
